What are Microgreens?
WHAT ARE MICROGREENS
Microgreens are the first set of true leaves of the adult plant. They are grown with just water and lights due to the seed having enough nutrients to sustain it for the first few weeks of this life. When you consume those first set of true leaves, you are then taking in all of those concentrated nutrients that make them such a convenient super food! According to a study in the Journal Agriculture and Food Chemistry, they are super charged with up to 40 times more vitamins and antioxidants as their adults counterparts. Depending on the species some of these vitamins and antioxidants are:

In addition to the abundance of health benefits that microgreens offer, they are simply delicious and most of them taste just like the adult vegetable that they are!
Microgreens Versus Sprouts
Microgreens are often mistaken for sprouts but they are not. In short, microgreens and sprouts look different, taste different and are grown different.
Sprouts and microgreens are different stages in development of the same seed. Sprouts are newly germinated seeds that have been soaked in water and do not require light.
After three to six days, you eat the seeds, roots and shoots.
Microgreens are the next stage in a plant cyle. They are the first set of true leaves of the adult plant. They are sown on a growing medium, take a minimum of two weeks to grow and require light. They are cut right above the growing medium and you eat the stem and leaves.
